
Mango French Toast

Ingredients (Serves 1-2)
For French toast:
1 egg
½ cup milk (divided)
1–2 tbsp sugar
A pinch of cinnamon
A pinch of salt
2 thick brioche slices (or 4 thin slices)
Butter, for toasting
For mango cream topping:
½ ripe mango (pulped)
2–5 tbsp fresh cream (adjust for thickness)
Sugar to taste
½ ripe mango (chopped or sliced for garnish)
Method
Step 1: Prepare egg mixtureIn a bowl, whisk together 1 egg, ¼ cup milk, 1–2 tbsp sugar, a pinch of cinnamon, and a pinch of salt. Add the remaining ¼ cup milk and blend well.
Step 2: Toast the briocheHeat butter in a pan. Dip both sides of the brioche slices in the egg mixture, then toast them on the pan until golden brown on both sides.
Step 3: Make mango creamIn a small bowl, combine ½ mango pulp with 2–5 tbsp fresh cream (add sugar if needed). Mix gently — do not beat or aerate. Adjust cream for desired consistency (thicker is richer).
Step 4: AssemblePlace the toasted brioche on a plate. Top with mango cream and garnish with chopped or sliced mango from the remaining half.
