Easy Banana Bread

Ingredients

  • 140 g plain flour

  • 4 g baking powder

  • 90 g caster sugar

  • A pinch of salt

  • 2 medium eggs

  • 100 g unsalted butter

  • 3 ripe bananas (plus 1 extra for decoration)

  • Ground cinnamon (to taste)

  • Vanilla / lemon zest for flavour



Method

  1. Preheat the oven to 180°C (160°C fan) / Gas Mark 4.

  2. In a mixing bowl, mash the 3 bananas with a fork until smooth. Add the cinnamon, lemon zest and eggs, then whisk together.

  3. Stir in the sugar, flour, baking powder and salt until combined.

  4. Melt the butter and fold it into the mixture until smooth.

  5. Pour the batter into a greased and lightly sugared loaf tin. Slice the extra banana lengthways and place it on top for decoration (optional).

    Bake for 30–40 minutes, or until a skewer inserted in the centre comes out clean.

    Allow to cool slightly before removing from the tin. Slice and enjoy!
